Thiesing was born in New Britain, Hartford County, Connecticut, USA, on 10 July 1905, to parents Adam Ulcas Huck and Wilhelmina Rittner. She had seven sisters, all of whom she survived.
Thiesing was married twice. Her first husband was James Thomson (1891–1952), with whom she had three children: Arthur James (1930–2009), William David (1931–2014), and Carole Guilmette (1932–2016). Her second marriage was to Arthur M. Thiesing (1903–1993).
Thiesing worked as a clockmaker at the former E. Ingraham & Company. She resided in Bristol, Connecticut, for an extended period before relocating to Framingham, Massachusetts, in the mid-1990s to be closer to her daughter. In her later years, she moved to St. Patrick’s Manor in Framingham.
Thiesing passed away in Framingham, Massachusetts, USA, on 22 July 2016, at the age of 111 years, 12 days.
Following the death of 113-year-old Goldie Michelson on 8 July 2016, she became the oldest living person in the U.S. state of Massachusetts.
